Ingredients

  • 4 fillets cod
  • as needed cherry tomatoes
  • 1 tbsp capers
  • 3.5 oz olives
  • 1 clove garlic
  • as needed salt
  • as needed pepper
  • Half glass white wine

How to make Mediterranean Cod

  • Let’s start preparing the Mediterranean Cod, wash the cherry tomatoes and cut them in half. Take a baking dish, add some extra virgin olive oil to the bottom, place the cod fillets, chopped garlic, cherry tomatoes, olives, and capers.

  • Add half a glass of white wine, some salt, pepper, and chopped parsley.

  • Bake in a preheated static oven at 350°F for 20/30 minutes. The cooking time varies depending on the thickness of the cod, so check before taking it out.

  • Occasionally open the oven and with a spoon, collect the cooking juices and baste the cod fillets, so they gain more flavor and remain tender and juicy.

  • Once cooked, remove the baking dish from the oven and serve the cod fillets hot, then adding the cherry tomatoes, olives, and capers. If desired, you can add some lemon slices and a sprinkle of chopped parsley.
