Ingredients
- 4 fillets cod
- to taste cherry tomatoes
- 0.35 oz capers
- 1.76 oz olives
- 1 clove garlic
- to taste salt
- to taste pepper
- Half cup white wine
How to make Mediterranean Cod
Let’s start preparing the Mediterranean Cod, wash the cherry tomatoes and cut them in half. Take a baking dish, add some extra virgin olive oil to the bottom, place the cod fillets, chopped garlic, cherry tomatoes, olives, and capers.
Add half a cup of white wine, some salt, pepper, and chopped parsley.
Bake in a preheated static oven at 356°F for 20/30 minutes, the cooking time varies depending on the thickness of the cod, so check before taking it out.
Every now and then open the oven and with a spoon collect the cooking juice and wet the cod fillets, so they gain even more flavor and remain soft and succulent.
Once cooked, remove the baking dish from the oven and serve the cod fillets hot, adding the cherry tomatoes, olives, and capers. If you like, you can add a few slices of lemon and a sprinkle of chopped parsley.
