- 18 oz netted melon or cantaloupe (weight without peel)
- 1/2 cup sugar
- 1/4 cup cornstarch
- 1 tsp vanilla extract

How to prepare Melon Jelly
Let’s start preparing the Melon Jelly, cut the melon in half, remove the seeds using a spoon, then slice it and remove the peel. Now weigh the pulp needed to make the jelly.
After weighing the pulp, cut it into pieces and place it in the blender.
Blend intermittently for a few minutes to achieve a nice smooth and as liquid as possible mixture.
Now strain the puree through a sieve.
Help pass it through with a spoon.
Add the sugar,
the cornstarch,
mix well with a whisk to dissolve any lumps.
Put it on the stove, bring to a boil, and let it thicken. Lower the heat and let it simmer for a few minutes.
Remove the pot from the heat, add a teaspoon of vanilla extract, divide
divide the mixture into molds, let it cool, and then place it in the refrigerator. Let it rest for at least 6 hours before consuming.
When the melon jelly is ready, remove it from the refrigerator, invert it onto a plate, remove the mold, and serve it. If you like, you can add a mint leaf.
