It keeps well in the pantry for a long time, but to best savor it, serve it chilled from the fridge or ice-cold from the freezer. - 1.8 lbs melon (pulp weight only)
- 500 ml pure alcohol
- 2.5 cups sugar
- 3.2 cups water
How to make MELONCELLO melon liqueur
Let’s start preparing MELONCELLO melon liqueur. Cut the melon in half, remove the seeds and rind, and cut the pulp into small pieces. You need to obtain 1.8 lbs of pure pulp.
Place the pulp in a large jar with an airtight seal, pour in the pure alcohol, and press the pulp so that the alcohol covers it. Close the jar and let it rest in a cool, dark place for 7 days, stirring daily and pressing the pulp well.
After the resting time, pour the sugar and water into a pot, put on the stove, and bring to a boil. As soon as it starts boiling, remove from heat and let cool completely.
Using an immersion blender, crush some of the melon pulp. When the sugar-water syrup is completely cool, place a strainer over the pot and pour the alcohol, which will now be a beautiful orange color, and the melon. Let it filter and press the pulp well.
Mix the alcohol and sugar-water syrup well so they combine thoroughly. Transfer the melon liqueur into bottles and let it rest for at least 15 days before consuming.
Once ready, serve it chilled or ice-cold.
