  • 7 oz carrots
  • 7 oz zucchini
  • 5 oz green beans
  • 5 oz cherry tomatoes
  • 7 oz spinach
  • 1 stalk celery
  • 1 onion
  • leaves basil
  • 2 potatoes
  • 3.5 oz borlotti beans
  • 5 oz chard
  • 1.75 oz leeks
  • as needed parsley
  • 3.5 oz peas

  • 2 tablespoons extra virgin olive oil

How to prepare minestrone in a pressure cooker

  • Let’s start preparing the minestrone in the pressure cooker. Wash all the vegetables, peel the potatoes, remove the outer part of the carrots with a peeler or by scraping them with a knife, and also remove the ends. Clean the green beans by removing the ends.

  • Peel the onion and cut the vegetables into pieces of about the same size. Cut the green beans into 3 pieces, and chop the spinach and chard coarsely.

  • Place the vegetables in the pressure cooker, add 2 tablespoons of extra virgin olive oil, and a handful of salt. Pour cold water until the vegetables are completely covered; it will take about 6 cups of water, especially because of the beans.

  • Close the lid, place on high heat, and as soon as you hear the whistle, lower the heat and let it cook for 20 minutes. If you haven’t added the beans, 15 minutes will be enough.

  • After the cooking time, turn off the heat, let the steam out, and when the safety valve lowers, open the pot and adjust the salt.

  • Serve the minestrone cooked in the pressure cooker hot, and if you like, add a drizzle of oil and some grated cheese.
