Ingredients

  • 10 oz noodles
  • 1 carrot
  • 1 zucchini
  • 1 spring onion
  • 8.8 oz prawns
  • 1/4 cup soy sauce
  • to taste ginger
  • to taste peanut oil
  • to taste salt

How to make Noodles with Vegetables and Shrimp

  • Let’s start preparing the noodles with vegetables and shrimp, clean the prawns, remove the shell, cut the back and with the help of a toothpick remove the black vein and wash them under running water.

  • Wash the vegetables, remove the ends from the zucchini, first slice it thinly and then cut each slice into sticks to create a julienne.

  • Peel the carrot and also slice it first and then into julienne strips, thinly slice the spring onions as well.

  • In a wok or a large pan, pour some peanut oil, add the shrimp and sauté them, grate some fresh ginger or sprinkle with dry ginger. When cooked, pour them onto a plate and set aside.

  • In the same wok or pan where you cooked the shrimp, pour some peanut oil and the vegetables, add a splash of water and cook on high heat for 10 minutes, always stirring to ensure even cooking and prevent burning. When the vegetables are cooked, add the shrimp and let them flavor.

  • Pour some lightly salted water into a pot, put it on the stove, and bring to a boil. When the water boils, remove from heat and add the noodles, let them rest covered with a lid for 5 minutes or the time indicated on the package.

  • Once cooked, drain them, pour them into the wok with vegetables and shrimp, add a splash of peanut oil, the soy sauce, and sauté everything on high heat for a few minutes to blend the flavors.

  • Serve the noodles with vegetables and shrimp hot.
