  • 2 leaves bay leaves

How to Make Octopus in a Pressure Cooker

  • Let’s start preparing the octopus in the pressure cooker. First, clean the octopus, rinse it under running water, remove the eyes, the central tooth, and the innards, and then rinse it well under running water.

  • Clean the carrot and the onion, place the vegetables in the pot, add the bay leaves and water, and put it on the heat without closing the pot with the lid.

  • When the water starts to boil, hold the octopus by the belly and dip it into the boiling water up to the tentacles 4/5 times to curl the tentacles, then immerse it completely in the water.

  • Close the pot with its pressure cooker lid and set on high flame; as soon as the pot starts to whistle, lower to minimum and cook for 30/40 minutes, then turn off and let the pressure release in the pot before opening the lid. Cooking time varies with the size of the octopus.

  • To check if the octopus is cooked, insert a fork tine into the head; if it enters easily, then the cooking is done, otherwise reclose the pressure cooker with the lid and continue cooking for a few more minutes.

  • Once the octopus is cooked, let it cool in its cooking water to make it even more tender and tasty.

  • Then cut the octopus into pieces and season as you prefer.
