How to prepare the Omelette with poppy greens
Let’s start preparing the Omelette with poppy greens, clean the poppy greens by removing the roots. Carefully clean the bottom part, removing any trace of dirt. Check each leaf one by one, removing the spoiled ones. Once cleaned, wash them with plenty of running water and dry them.
Place them in a large pot and add some water. Put on the heat and cook for 15 minutes, then drain them. Let them cool a little, and then squeeze out the excess water. Let them cool.
Pour the eggs into a bowl and beat with a fork. Add some salt and, if you like, a tablespoon of grated cheese. Add the previously boiled poppy greens and incorporate them into the eggs.
Heat the pan and then pour in the eggs with the poppy greens. Spread over the entire pan, moving the pan so that the eggs cover the entire surface. Keep on the heat. When you see that the omelette is cooked on the bottom, detach it with the help of a spatula and slightly move the pan, keeping it on the heat. When you see that the omelette is also cooked on the top, use a flat plate to flip it and continue cooking for another minute.
Place a baking paper tray in the air fryer basket and pour in the eggs with the poppy greens. Level and distribute them well throughout the tray. Cook at 356°F (180°C) for 15 minutes, then open the basket and check that the eggs have set, possibly continuing to cook for a few more minutes. The time may vary depending on the type of air fryer used. When cooking is finished, open the fryer basket and remove the tray with the omelette.
Pour the eggs with the poppy greens into a baking dish with parchment paper and bake in a preheated static oven at 356°F (180°C) for 30 minutes or in a microwave at 750W for 10 minutes. You will obviously need to have a microwave-safe dish.
