How to make Onion Focaccia with instant yeast

  • Let’s start preparing the Onion Focaccia with instant yeast: pour the flour, the instant yeast, the extra virgin olive oil, a pinch of salt and the milk into a bowl and work everything first with a fork and then with your hands until you obtain a smooth and homogeneous dough. Cover with a kitchen towel and let rest for 5 minutes.

  • Peel the onion and slice it thinly with a mandoline or a knife. Line the baking tray with parchment paper and pour the dough onto it; spread it with your hands or, if you prefer, with a rolling pin. Drizzle olive oil over the entire focaccia, sprinkle coarse salt, oregano and the sliced onion.

  • Preheat a conventional oven to 356°F (180°C) and when it’s hot bake the onion focaccia for 25–30 minutes. Before removing, check that the base is cooked; the time may vary depending on your oven.

  • When it’s cooked, remove from the oven and cut into pieces. Serve hot or at room temperature.
