ORECCHIETTE WITH BROCCOLI RABE AND CLAI DRIED SAUSAGE

Orecchiette with broccoli rabe and CLAI dried sausage is an easy and flavorful first course. Broccoli rabe is typical of Apulia, but in recent years it has spread throughout Italy. It’s considered a typical autumn and winter vegetable, but now many companies have decided to freeze it, so it can be found year-round in supermarkets. To make this dish even more special, I’ve added CLAI dried sausage, a uniquely thin salami produced according to an ancient recipe with the finest lean pork from pigs born and raised in Italy. The dried sausage is a typical Romagna sausage, with a sweet and delicate taste, stuffed in natural casing. It is gluten-free with the addition of the barred ear, free of milk and derivatives, with added iodized salt. Ingredients to prepare Orecchiette with broccoli rabe and sausage

  • 2 bunches broccoli rabe
  • CLAI dried sausage
  • 250 g orecchiette
  • extra virgin olive oil
  • 1 clove garlic
  • 1 chili pepper
  • salt

Preparation

  • Let’s start preparing Orecchiette with broccoli rabe and CLAI dried sausage. Wash the broccoli rabe, removing the yellow and ugly leaves. Pour some water into a pot and lightly salt it. When it boils, add the broccoli rabe and cook them for about ten minutes.

  • Slice the CLAI dried sausage thinly, remove the natural casing, and chop it finely. In the meantime, in a pan, pour 4 tablespoons of extra virgin olive oil, a clove of garlic, and the chili pepper. Let them fry for a couple of minutes, then remove the garlic and chili pepper. When the broccoli rabe is cooked, drain them with a slotted spoon and add them to the pan where you fried the oil and garlic.

  • Add the CLAI dried sausage and let it flavor for a few minutes. Pour the orecchiette into the broccoli rabe’s cooking water and cook them for the time indicated on the package.

  • When the orecchiette are cooked, drain them and add them to the pan with the broccoli rabe. Stir for a couple of minutes to let the dish absorb the flavors.

  • Serve the Orecchiette with broccoli rabe and CLAI dried sausage hot, with pieces of dried sausage on top.
