Procedure to make oven-baked pork skewers
Let’s start preparing the oven-baked pork skewers clean the bell pepper, remove the top of the stem, remove the internal seeds and white filaments, rinse well under running water, and cut it into square pieces of about 1 inch. Wash the sage leaves and rosemary sprigs, and peel the garlic clove. Pour some extra virgin olive oil into a baking tray and add the sage, rosemary, and garlic clove. Preheat the static oven to 356°F.
Cut the sausage into pieces, and also cut the bacon and loin. Now that you have all the ingredients ready, you can start preparing the skewers by skewering the ingredients onto wooden or metal skewers, depending on what you have available; I use wooden ones because they are more practical and disposable.
Try to insert the pieces of meat in an orderly way on all 4 skewers; they will look more aesthetically pleasing when you serve them. Add two or even three slices of bacon, and if you like peppers, you can add more pieces, not just 1 or 2.
I placed a piece of loin, a piece of bell pepper, some bacon, more loin, sausage, bell pepper, bacon, and loin. Of course, you can adjust the arrangement according to your preference.
When you have completed the skewers, place them in the baking tray, season with salt and pepper, add the white wine, and a drizzle of extra virgin olive oil. Bake for 40 minutes, occasionally turning the skewers, so they get golden on all sides.
