Ingredients

  • 1 3/4 lbs Squid
  • 1 clove Garlic
  • 2 leaves Bay leaves
  • Salt
  • Pepper
  • 4 tbsp Extra virgin olive oil
  • glasses White wine

How to make Pan-fried squid in white wine

  • Let’s start preparing pan-fried squid in white wine. First, clean the squid. Rinse them under running water; with a knife remove the eyes and the beak, remove the entrails and also the transparent cartilage filament located in the back — just pull it gently and it will come out. Rinse them again under running water and let them drain in a colander.

  • Now that the squid are cleaned, remove the side fins from the squid and cut the body into rings; cut the tentacles in half if they are large. Peel the garlic clove and cut it in half.

  • Pour 4 tablespoons of extra virgin olive oil into a pan, add the garlic clove and lightly brown it for about a minute. Add the bay leaves and then the squid; cook for 5 minutes, then deglaze with the white wine and season with salt and pepper. Continue cooking for another 5 minutes, or until the wine has completely evaporated.

  • When the pan-fried squid in white wine are cooked, remove them from the heat, discard the garlic and bay leaves, and serve hot.
