PANZEROTTI IN AIR FRYER

Panzerotti in the air fryer ready in a few minutes and they don’t need rising time; you can serve them instead of pizza, to accompany an aperitif or as an appetizer. Air-fryer calzones can be filled in many ways depending on what you have in the pantry or fridge. For example, I filled them with mozzarella, cooked ham and sautéed mushrooms. To cut the dough discs for the panzerotti you can use a round cutter or a small plate and then trim the edge with a knife; I made them 6 5/16 in. If you have it, you can also use a panzerotti mold ( this ONE ). These panzerotti are made with instant baking powder for savory preparations, so you don’t have to let them rise for hours — they will rise during baking.   • 2 cups flour

How to make panzerotti in the air fryer

  • Let’s start preparing the panzerotti cooked in the air fryer. Make the dough by putting the flour, the baking powder, the water, the oil and a pinch of salt into a bowl. Mix well and knead for a few minutes until you have a smooth dough ball.

  • Divide the dough into 6 portions, roll each out with a rolling pin and cut the discs; you can use a round cutter, a small plate or the special panzerotti tool, then trim the edge with a knife — I made them about 6 5/16 in.

  • Fill them with cooked ham, pizza mozzarella and sautéed mushrooms. Close the panzerotti pressing the edges firmly; if you don’t have the tool, fold the dough over to seal well and press the tines of a fork along the edge.

  • Proceed until you’ve used all the dough. Any scraps from cutting the discs can be re-kneaded to make more calzones.

  • Place the panzerotti in the air fryer basket, spray them with extra virgin olive oil and cook at 374°F for 12 minutes. Cooking time may vary depending on the air fryer model.

  • When the panzerotti are cooked, remove them from the air fryer basket and serve hot.
