- 1.75 lbs Pork loin
- 2 Pomegranate
- 4 tbsps Extra virgin olive oil
- 1 sprig Rosemary
- 1 clove Garlic
- 4 leaves Sage
- Salt
- Pepper
How to prepare Pork Loin with Pomegranate Sauce
Let’s start preparing Pork Loin with Pomegranate Sauce by squeezing the pomegranate to get the juice; follow my tutorial on how to do it, and you’ll find it HERE
Wash the rosemary and sage, and clean the garlic. To cook the loin, you can use either a pressure cooker or a traditional pot. You know that with a pressure cooker, cooking times are cut in half.
Pour 4 tablespoons of extra virgin olive oil into the pot, add the rosemary sprig, sage, and garlic clove, then add the loin, pomegranate juice, a pinch of salt, and a sprinkle of pepper.
Cook for 20 minutes if using a pressure cooker or 40 minutes if using a traditional pot.
After the cooking time, take out the loin, let it cool slightly, and cut it into thin slices.
Arrange the slices in a pan so that you can reheat them when serving. Strain the pomegranate sauce obtained from cooking the loin through a sieve and pour it over the slices in the pan.
Reheat for about 10 minutes to allow the sauce to thicken slightly. You can optionally add some pomegranate seeds and serve the Pork Loin with Pomegranate Sauce hot.
