- 1.1 lbs boiled potatoes
- 3.5 oz diced speck
- 10.6 oz mushrooms
- to taste parsley
- 1 clove garlic
- 1 egg
- 3.5 oz stringy cheese
- to taste salt
- 4 tbsp breadcrumbs
How to prepare the potato and mushroom meatloaf
Let’s start preparing the potato and mushroom meatloaf, boil the potatoes, check the cooking by inserting the fork tines. If they enter easily, the potatoes are cooked. Prepare the mushrooms, clean them, wash them quickly under running water, and then cut them into small pieces,
pour them into a pot,
add some oil, the garlic clove
and the parsley, let them cook for 15 minutes.
Cut the speck into cubes
and the cheese.
When the potatoes are still warm, mash them with a potato masher directly into the bowl.
Add an egg, the diced speck,
some extra virgin olive oil,
the previously cooked mushrooms,
the cheese cubes,
and the breadcrumbs, mix everything well so that the breadcrumbs are well incorporated with the potatoes.
Transfer everything onto a sheet of parchment paper,
and compact it well using the parchment paper and shape it into a salami.
Place in a baking dish and add some oil,
and sprinkle with breadcrumbs.
Bake in a preheated static oven at 350°F and cook for 20 minutes. When ready, take it out of the oven, let it rest for a few minutes, and then slice it.
