How to prepare Potato Mini Pizzas
Let’s start preparing the Potato Mini Pizzas. Wash the baby potatoes, place them in a pot with water. Put on the stove and cook for 20/30 minutes, the time varies depending on the size of the potatoes. To check if they are cooked, insert a fork; if it enters easily, the potatoes are done.
Pour the tomato puree into a bowl, add some salt,
some extra virgin olive oil,
and some oregano,
mix and set aside.
When the potatoes are cooked, remove them from the water and place them in a baking dish; with a cup or a small glass, press them in the center.
Add some extra virgin olive oil,
the tomato puree,
some cubes of pizza mozzarella or scamorza cheese,
a pinch of salt,
some extra virgin olive oil,
and some oregano.
Cook in the air fryer at 375°F for 5 minutes, or in a preheated static oven at 350°F for 10 minutes, until the cheese melts.
Serve the Potato Mini Pizzas piping hot
