POTATOES, ONIONS, AND EGGS

Potatoes, onions, and eggs is a very simple second course to make but above all rich in flavor. I love preparing eggs in all ways, but sunny-side up is my favorite, with the yolk soft so you can soak it up with bread. Eggs with potatoes and onion are prepared in a single pot so after the meal you won’t have to wash a lot of pans. For this recipe, I used Tropea onions which are sweet and flavorful, but you can use whatever onions you prefer, maybe even onions from your area. Ingredients for preparing potatoes, onions, and eggs

  • 2 potatoes (medium-sized)
  • 1 Tropea red onion
  • to taste extra virgin olive oil
  • to taste salt
  • to taste pepper
  • 4 eggs
  • 1 sprig rosemary
  • 1 clove garlic
  • 0.42 cup vegetable broth

How to prepare potatoes, onions, and eggs

  • Let’s start preparing Potatoes, onions, and eggs, peel the potatoes and cut them into small cubes, all about the same size to achieve uniform cooking. Also, clean the onion and cut it into chunks. Clean the garlic clove and wash the rosemary.

  • Pour a few tablespoons of extra virgin olive oil into a pan, add the potatoes and onion, season with salt and pepper, and add the garlic clove and rosemary. Sauté for a few minutes, then add the broth and cook for 15 minutes or until the potatoes are soft. Do the fork test, if the tines enter easily, they are ready.

  • Create two small wells between the potatoes and onions and crack the eggs into them, cook until the whites are set. Cook the yolk to your taste and preference; for example, I like it soft so I can soak it up with bread.

  • When the Potatoes, onions, and eggs are ready, serve them hot with a nice sprinkle of pepper.
