Ingredients for making puff pastry with cream and strawberries

  • 1 puff pastry (rectangular)
  • 8.8 oz strawberries
  • 1 egg yolk
  • sugar sprinkles
  • 1 egg yolk
  • 0.25 cup sugar
  • 2 tbsp cornstarch
  • 1 cup milk
  • 1 tsp vanilla extract
  • to taste lemon zest

How to make puff pastry with cream and strawberries

  • Let’s start making the Puff Pastry with Cream and Strawberries. First, prepare the Pastry Cream by pouring an egg yolk into a saucepan, adding the sugar, and mixing well with a whisk. Then add the cornstarch, vanilla extract, and lemon zest, mix well, and gradually add warm milk to prevent lumps.

  • Put on heat and stir continuously until thickened. Pour the cream onto a plate and cover with cling film in contact with the cream to prevent a skin from forming, and let it cool completely.

  • Clean the strawberries, remove the leaves, and cut them into small pieces.

  • Unroll the puff pastry, spread the Pastry Cream on one half, and spread it well. Place the chopped strawberries on top of the Pastry Cream and cover with the other half of the puff pastry.

  • Brush the surface with the beaten egg yolk, use a sharp knife to cut into squares without moving them. I cut the shorter side into 3 parts and the longer side into five, resulting in 15 squares.

    Sprinkle with sugar sprinkles and preheat the oven to 350°F.

  • When the oven is hot, bake and cook for 20 minutes, the puff pastry should be golden and beautifully puffed.
