Puff pastry with sliced potatoes is a delicious savory pie with potatoes, quick and easy to make. You only need very few ingredients to prepare it, and you can eat it either hot or at room temperature. The puff pastry with potatoes is prepared in no time with raw potatoes, so you don’t need to cook anything before filling it. The puff pastry and potato pie is also enriched with cooked ham and smoked scamorza cheese; alternatively, you can use smoked bacon instead of ham. How to prepare puff pastry with sliced potatoes
Start by preparing the puff pastry with sliced potatoes. Grate the pizza mozzarella using a wide hole grater and set it aside.
Peel the potatoes, wash them, and dry them with paper towels.
Slice them using a mandoline,
to a thickness of about 1/16 inch.
Unroll the puff pastry, fold the edges to create a rim during baking, and
poke the base with a fork.
Spread the cooked ham over the base, leaving the edges clear,
add the slices of smoked scamorza cheese
and finish with the potato slices.
Salt the potatoes,
add rosemary sprigs,
the grated mozzarella,
and a drizzle of extra virgin olive oil. Bake in a preheated static oven at 350°F for 30 minutes.
Cut the puff pastry with sliced potatoes and serve.

I recommend eating it the same day to enjoy the crispiness of the puff pastry. Alternatively, you can store it in the refrigerator for up to 2 days
