Quinoa meatballs and light, tasty vegetables, these are vegetarian quinoa meatballs perfect even for those who don’t eat meat. To prepare the quinoa meatballs, I used zucchini, but you can replace the zucchini with other seasonal vegetables, spinach, pumpkin, peas, eggplants, basically with any vegetable, and you can eat them both warm and at room temperature. Quinoa is rich in fiber and minerals such as iron, zinc, magnesium, and phosphorus, it’s an herbaceous plant, an excellent source of vegetable protein, very digestible, and has very few calories, making it suitable also for those who are dieting. You can cook the vegetarian quinoa meatballs either in the oven or in an air fryer; I’ll provide both times in the recipe procedure. Ingredients for preparing Quinoa Meatballs
- 5.3 oz quinoa
- 8.8 oz zucchini (or other vegetables)
- 1 shallot
- 1 egg
- 2 tablespoons flour
- breadcrumbs
- salt
- pepper
- extra virgin olive oil

How to prepare Quinoa Meatballs
We start to prepare the Quinoa Meatballs by cleaning the zucchini or another vegetable of your choice. Pour 3 tablespoons of extra virgin olive oil into a pan, add the zucchini and a splash of water, cook for 10/15 minutes until they become soft.
Rinse the quinoa, pour 2 cups of water into a pot, salt it, and bring it to a boil. Then, add the quinoa and cook for 15 minutes, then drain it.
In a bowl, combine the zucchini or other chosen vegetable, quinoa, an egg, flour, a pinch of pepper, a tablespoon of extra virgin olive oil, and mix well. Now add the breadcrumbs and form the meatballs using your hands.
Oil a baking sheet with extra virgin olive oil, place the Quinoa Meatballs on it, and bake them in a preheated static oven at 356°F for 20 minutes.
Place the meatballs on the basket of the air fryer, spray some puffs of extra virgin olive oil on the meatballs, and cook them at 392°F for 10 minutes, turning the meatballs halfway through cooking
How to store the Quinoa Meatballs
Store them in the refrigerator for 2/3 days
