RAW ASPARAGUS SALAD

Raw asparagus salad also perfect as an appetizer or as a side dish to accompany a second course of meat or fish. The other day I went to my trusted greengrocer, they always have quality products and I blindly trust them and their advice, by now they know that when they have some special product, they propose it to me, and so it was for some wonderful purple asparagus that I had never eaten. They advised me to try them raw as they are very tender and do not need to be peeled as is the case with the local white asparagus. Instead of purple asparagus, you can use green asparagus or the tips of white asparagus. I kept it simple, but you can enrich it by adding flakes of Grana or Parmesan cheese, walnuts, or seeds for salads.   • 1.1 lbs asparagus (I use purple)
  • to taste salt
  • to taste extra virgin olive oil
  • to taste pepper
  • to taste lemon

How to prepare Raw Asparagus Salad

  • Let’s start preparing the raw asparagus salad. Wash the asparagus and remove the harder end of the stalk. Just take one asparagus at a time in your hands, bend the end, and you’ll see it break at the right point. If you use very fresh asparagus, it’s not even necessary to peel them. If you see they have filaments, then use a vegetable peeler. The end is not to be consumed raw, but you can use it to make a vegetable broth or a risotto.

  • If you use white asparagus, peel them because the outer part is fibrous. Once the asparagus is cleaned, cut them into slices or better yet, in a slant.

  • Once you have cut the asparagus, season them with salt, pepper, olive oil, and lemon juice. If you like, you can also add balsamic vinegar glaze.
