RECIPE FOR SWEET AND SAVORY CREPES

Ingredients to prepare SWEET AND SAVORY CREPES

  • 3 Eggs
  • 2.1 cups Milk (soy if lactose intolerant)
  • 1.6 cups Flour
  • 2 pinches Salt

How to prepare sweet or savory crepes

  • Let’s proceed with the Recipe for crepes, break the eggs into a bowl, beat them with a fork and add half of the flour. Mix well with the fork or a whisk until it becomes a smooth cream, add the remaining flour, and mix carefully to eliminate all lumps.

  • Now add the milk little by little, always mixing with the fork or better yet with the whisk to avoid forming lumps, add 2 pinches of salt.

  • If you see that the mixture is not smooth and creamy enough but has lumps, you can work it with electric beaters (photo 1). Now cover the mixture with plastic wrap and let it rest in the fridge for 30 minutes.

  • Now heat a non-stick pan or use the special crepe maker. As a reference dose, pour a ladle into the pan, tilt it so that the mixture spreads evenly throughout the pan, or if you are using the crepe maker, pour it in the center (photo 2) and spread it with the special tool (photo 3).

  • Cook it for about a minute or until it detaches from the sides, flip it and leave it for another minute. Now place it on a plate and proceed this way until you finish the batter. You can store them in the fridge for a few days or even in the freezer.

How to store crepes

You can keep them in the refrigerator for 2/3 days or freeze them.
