How to make salt-baked prawns
Let’s start preparing the salt-baked prawns. Clean the prawns, remove the legs by cutting them with scissors, do not remove the head, and rinse them under running water. I recommend not slicing them to remove the intestine, as salt would penetrate inside the prawns, making them too salty. Wash the lemon and cut it into slices; also wash the rosemary sprigs.
Make a layer of salt on the bottom of the baking pan, arrange the lemon slices and rosemary, and place the prawns neatly and close together.
Arrange lemon slices and rosemary over the prawns, cover with coarse salt.
Bake in a preheated convection oven at 356°F for 20 minutes.
When they’re done, take them out of the oven, break the salt crust, remove the prawns, and eliminate excess salt before serving.
