Soft pancakes with cream are delicious Carnival pancakes with cream, very easy and quick, ready in a few minutes and incredibly soft. To prepare these pancakes with cream you only need a bowl and a fork, no blenders or electric whisks are needed. Do you know the difference between castagnole and fritters? Fritters have a creamy consistency and sometimes they are also filled, while castagnole are fried dough bites, with a compact dough that is worked by hand, like gnocchi. I did not add raisins, but if you like, you can add 50 g previously soaked in hot water. - 1 cup liquid fresh cream
- 2 cups all-purpose flour
- 1/3 cup sugar
- 2 eggs
- 1 rum (vial)
- 1 packet baking powder
- peanut oil
- powdered sugar
How to prepare Soft Pancakes with Cream
Let’s start preparing the Soft Pancakes with Cream by pouring the cream and sugar into a bowl, mix well, add the eggs, rum vial, flour, and baking powder packet, and mix well with a fork until the batter is smooth.
Pour peanut oil into a pot and heat it to about 340/356°F, if you don’t have a thermometer, check the temperature with a wooden skewer, if bubbles form around it, the oil is ready for frying. If the oil is too hot, the fritters will remain raw inside, while if it’s too cold, they will be soaked in oil.
Use a teaspoon to scoop up the batter and drop it into the hot oil, using another teaspoon to release it, make more fritters but not too many at once, otherwise you won’t have space to turn them and they won’t cook evenly.
When the Soft Pancakes with Cream are golden brown, use a slotted spoon to drain them and let them dry on paper towels.
Once they are all cooked, transfer them to a serving dish with fresh paper towels underneath and sprinkle with powdered sugar.
