SPAGHETTI WITH MUSSELS

Ingredients

  • 11 oz spaghetti
  • 2.2 lbs mussels
  • 1 clove garlic
  • to taste parsley
  • 10.5 oz tomato pulp
  • 1 glass white wine

How to make Spaghetti with Mussels

  • Let’s start preparing spaghetti with mussels, first clean the mussels thoroughly from the external beard and the side thread, I clean them with a steel wool, it will be easier and faster.

  • Pour 3 tablespoons of extra virgin olive oil into a large pan, add the garlic clove, put on the heat and let it flavor for a few minutes, add the mussels and cover with a lid.

  • After a few minutes, you will see the mussels begin to open, add half a glass of white wine and continue cooking without a lid so that the wine evaporates, season with salt and pepper, add chopped parsley, stir and continue cooking for a few minutes, stirring occasionally.

  • Once cooked, remove the mussels from their shells and strain the cooking liquid. Pour the tomato into a pan, and a garlic clove, let it flavor for 5 minutes, then remove the garlic clove, add the shelled mussels, a sprinkle of parsley and let it flavor for 5 minutes.

  • Pour water into a pot, put on the heat and bring to a boil, salt and pour the spaghetti that you will cook for half of the indicated cooking time.

  • Drain the spaghetti, pour them into the pan with the sauce and mussels, put on the heat and gradually add the cooking liquid of the mussels so that the spaghetti absorbs the sauce and cooks.

  • Once cooked, serve the spaghetti with mussels hot and sprinkle with parsley.
