Ingredients

  • 1.76 lbs Squid
  • 1 2/3 cups Tomato puree
  • 1.76 oz Onion
  • 3 tbsp Extra virgin olive oil
  • to taste Salt
  • to taste Pepper
  • 1 pinch Ginger powder (or a grating of fresh ginger)
  • 1 pinch Curry
  • 1 leaf Bay leaf
  • to taste Chili pepper (optional)
  • 1 glass White wine

How to prepare Squid in Sauce

  • Let’s proceed with the preparation of squid in sauce. Clean the squid by removing the eyes, beak, innards, and cartilage, which you can easily pull out. Rinse them well under running water, cut the body into rings, and divide the tentacles in half if they are large; otherwise, leave them whole.

  • Clean the onion and chop it finely, clean the garlic and cut it in half. Pour 3 tablespoons of extra virgin olive oil into a pan, add the garlic and sauté for a minute.

  • Add the chopped onion and squid, cook for two minutes, then deglaze with the wine and continue cooking until the wine has completely evaporated. Add the bay leaf, ginger, curry, chili pepper, season with salt and pepper, and add the tomato puree.

  • Cover with a lid and cook for 10 minutes. If you see the sauce reducing too much, add half a glass of water. When the squid in sauce is cooked, serve them hot, perhaps accompanied by polenta or slices of bread.
