- 4 Potatoes
- 3 oz Tuna in oil
- 3 oz Green olives
- Salt
- Pepper
- 1 tbsp cream cheese
- 3.5 oz melting cheese
How to prepare Stuffed Potatoes with Tuna and Olives
Let’s start preparing the stuffed potatoes with tuna and olives. Wash the potatoes well and do not peel them. Now we need to give the potatoes a first cook. They should be cooked in the oven at 350°F for 40 minutes, but if you’re in a hurry, you can cook them in a pressure cooker. I cook them for 10 minutes; if you don’t use the pressure cooker, use a traditional pot and cook them for 15 minutes.
While the potatoes are cooking, cut the pitted olives into small pieces and drain the tuna from the excess oil. Cut the melting cheese into pieces. Place the tuna, cream cheese, olives, and cubed cheese in a bowl.
Drain the potatoes and, using a scoop, hollow them out, then place them in a baking dish. Add some oil and repeat with the tuna filling. Add some cheese cubes and an olive for decoration. Sprinkle with pepper and add a drizzle of extra virgin olive oil.
Turn on the static oven to 350°F, and when it is hot, bake. Cook for 10 minutes to lightly gratinate the surface and melt the cheese. Serve the stuffed potatoes with tuna and olives hot or at room temperature.
