Stuffed Turkey Roll is a delicious main course, perfect for special occasions, lunches, or dinners with friends and family. The baked turkey roll can be enjoyed either hot or at room temperature, perhaps during the warmer season. You can also prepare the turkey roll the day before; once cooked, let it cool at room temperature and then refrigerate it. When you’re ready to serve, simply take it out of the fridge, slice it, and reheat it in the oven, on the stove, or even in the microwave. This way, you can organize yourself better. The roasted turkey roll will remain tender and flavorful. Alternatively, you can use speck instead of bacon, but since it’s leaner than bacon, the turkey might be slightly drier. Now let’s see how to cook the stuffed turkey roll, and if you try it, let me know. Barbara

How to prepare the Stuffed Turkey Roll
Let’s start preparing the Stuffed Turkey Roll. Crack the eggs into a bowl and beat them with a fork.
Pour a drizzle of oil into a non-stick pan and place it on the heat,
when it’s hot pour in the beaten eggs and cook the omelet, flipping it once it’s set.
Lay the turkey slices on a sheet of parchment paper and slightly overlap them to make them stick together. If they are thick, flatten them with a meat tenderizer. Add a pinch of salt to the meat.
Place the previously cooked omelet on top,
arrange the slices of smoked bacon,
and in the center, place the sautéed mushrooms.
With the help of the parchment paper, roll everything up,
cover the roll with bacon,
Then place the roll in a baking dish, add rosemary sprigs, sage leaves, and a drizzle of extra virgin olive oil. Cook in a preheated static oven at 350°F for 30 minutes. If it browns too much and the bacon starts to dry out, cover it with aluminum foil.
When it’s cooked, take it out of the oven, and before slicing it, let it cool. It’s even better if you prepare it the day before and slice it when it’s cold from the fridge.
Serve the turkey roll sliced, either hot or at room temperature, with a drizzle of cooking juices.
How to store the Stuffed Turkey Roll
