  • 3.5 oz onion
  • 3 tbsp white wine vinegar
  • 3 tbsp sugar

How to prepare Sweet and Sour Pumpkin

  • Let’s start preparing the sweet and sour pumpkin, clean the pumpkin from seeds and internal filaments, remove the skin and then cut into small pieces. Also clean the onion and thinly slice it with a mandoline or knife.

  • Pour some extra virgin olive oil and the onion into a pan, let it brown for a few minutes, then add the pumpkin, stir and cook for a few minutes.

  • Then add the white wine vinegar and sugar, adjust the salt and add the grated nutmeg, cook on low heat for 5 minutes, stirring occasionally, if you see that the pumpkin dries out, add some water and continue cooking.

  • When the sweet and sour pumpkin is cooked, remove from the heat and serve it or let it cool and store it in a container with a lid.
