To make the sponge cake, you can use a stand mixer or electric beaters. It is very important that the eggs are well beaten, high and frothy, so if you have a stand mixer, it will make it much easier. As the original Venetian tiramisu recipe requires, I used unpasteurized eggs, but if you prefer not to consume raw eggs, proceed with pasteurization by following this tutorial, or buy pasteurized eggs. Steps to make tiramisu with sponge cake

  • Let’s start preparing the Tiramisu with sponge cake. First, prepare the sponge cake following this recipe. When it cools, cut it into slices about 3/4 inch thick. You can also use leftover sponge cake, even if not neatly cut; it will be in the middle of the tiramisu and won’t be visible.

  • Prepare the coffee, which must be cold when used. Separate the eggs and pour the yolks into a bowl. Add the sugar and beat with electric beaters or a stand mixer. You need to achieve a frothy, pale cream; it will take a few minutes. The more you work it, the more whipped it will become.

  • Add the mascarpone and mix further until you obtain a soft and creamy mixture.

  • Place the sponge cake at the bottom of the dish, soak it well with coffee, and pour over some mascarpone cream.

  • Place another layer of sponge cake, soak with coffee, and cover with the remaining cream.

  • Sprinkle with some unsweetened cocoa powder and put the Tiramisu with sponge cake in the refrigerator to rest for at least a couple of hours. It’s better if you prepare it the night before so it has time to develop even more flavor.
