Tonnato meatloaf is a fresh main course perfect even on hot summer days. You can prepare it in advance and it is also ideal to bring to work for lunch. You can cook the meatloaf in the oven or air fryer, and once it is cooked and cold, simply slice it and serve it with the tuna sauce. If you make it in advance, I recommend keeping the tuna sauce aside in a bowl and only adding it to the meatloaf right before serving so it doesn’t dry out. Now let’s see how to make tonnato meatloaf and if you try it, let me know. Barbara

Ingredients for preparing tonnato meatloaf
- 1.3 lbs ground beef
- 1 egg
- 1 potato
- to taste parsley
- 2 tbsps breadcrumbs
- 2 eggs
- Half lemon
- 7 oz tuna
- 0.7 oz capers
How to prepare tonnato meatloaf
Let’s start preparing the tonnato meatloaf, pour the ground beef and the egg into a bowl, then break it with a fork,
add some chopped parsley,
a boiled and mashed potato and mix it well with the meat.
Add the breadcrumbs and mix so that it blends with the meat,
then transfer the meat onto a sheet of parchment paper and shape it into a meatloaf,
close well so that it is compact and let it rest in the refrigerator for 30 minutes.
Take the meatloaf again, sprinkle with breadcrumbs, and place it in the baking dish,
add a drizzle of oil and cook in an air fryer at 375°F for 30 minutes, or in a preheated static oven at 350°F for 45 minutes. Once cooked, take the baking dish out and let it cool before slicing.
Now prepare the sauce, put the eggs in a saucepan with water, set them on the stove, and cook for 7 minutes from when the water starts boiling. Once the eggs are cooked, remove from the stove and cool them under cold water; this way, they will peel easily due to the thermal shock.
Squeeze the lemon juice,
peel the eggs
and cut them into pieces, put them in the blender glass,
add the capers,
the tuna
and the lemon juice,
blend until you get a smooth and creamy tuna sauce. If you want it softer, add a bit more lemon juice or a spoonful of mayonnaise.
When the meatloaf is well-chilled, slice it thinly and serve with the tuna sauce. If you like, you can add some chopped parsley or lemon zest.
How to store tonnato meatloaf
Store the tonnato meatloaf in the refrigerator. It’s better to keep the sauce aside and serve it over the meatloaf only at the moment of serving it.
