- 1 cup Ricotta
- 1/2 cup Butter
- 2 cups Flour
- 1 pinch Salt
- 1 packet baking powder
- to taste jam (or marmalade)
- to taste powdered sugar

How to make Filled Soft Cookies
Let’s proceed with the preparation of Filled Soft cookies or sweet ravioli, place the butter in a bowl and leave it at room temperature for about ten minutes and mash it with a fork,
add the ricotta
and mix it well with the butter.
Now add a pinch of salt,
baking powder
and the flour in two batches, the first time incorporate the flour with a fork,
then add the remaining flour and knead with your hands until you have a compact mixture,
transfer to the work surface and knead well until you get a compact, smooth, and glossy ball.
Transfer the crust between two sheets of parchment paper and roll it out thinly with a rolling pin, then place it in the refrigerator to rest for at least 30 minutes.
After the rest in the refrigerator, take out the crust, dust it with flour, and if necessary, roll it out further with the rolling pin. Form the ravioli with the appropriate tool or cut out circles and then close them with the tines of a fork, or cut squares about 4 inches on each side and make them triangular or rectangular. Place jam, chocolate, or mustard in the center of each ravioli, as you prefer.
Close each sweet ravioli well, otherwise, during baking, the jam might leak out.
As you go, arrange the ravioli on the oven tray, re-knead the leftovers, roll them out again with the rolling pin, and form other sweet ravioli.
Bake the filled soft cookies in a preheated static oven at 350°F for 15/20 minutes. The baking time may vary depending on the type of oven and the thickness of your shortcrust. Once baked, remove them from the oven, let them cool, and then dust them with powdered sugar.
They are very soft and crumbly.
