- 2 Egg yolks
- 1/2 cup Sugar
- 1/4 cup Cornstarch (or flour)
- 2 cups Milk (or plant-based milk)
- 1 pod Vanilla (or vanilla extract)
How to make Vanilla Pastry Cream
Let’s start making the vanilla pastry cream by separating the eggs and pouring the yolks into a saucepan large enough to then contain all the milk.
Add the sugar and thoroughly beat the yolks and sugar with a whisk, add the cornstarch or if you don’t have it, the flour and mix carefully to eliminate any lumps.
Gradually add the milk and incorporate it so as not to form lumps. Put it on the heat and keep stirring with a hand whisk or a spoon, otherwise it will stick to the bottom.
Add the vanilla and within a couple of minutes, you will see that the pastry cream will start to thicken, stir until fully thickened.
Pour the vanilla pastry cream into a plate or bowl, cover with cling film making it adhere to the pastry cream, and let it cool at room temperature. If you need thick vanilla pastry cream, put it in the refrigerator before using it.
