Ingredients
- 7 oz Carrots
- 2 cups Flour
- 3.5 oz Almonds
- 3/4 cup Brown sugar
- 7 oz Almond milk (or other plant-based milk)
- 1/4 cup Sunflower oil
- 1 packet Cream of tartar (With a pinch of baking soda)
- Powdered sugar (vegan)
Preparation
Let’s start preparing the vegan carrot and almond cake, clean the carrots and grate them finely, ideally after grating them, you should blend them to make small pieces.
Blend and turn the almonds into flour together with the brown sugar. Pour into a bowl, the sifted flour, the cream of tartar mixed with baking soda, and the finely chopped almonds together with the sugar, mix everything and add the oil and milk, and lastly add the grated carrots and mix everything again.
Grease the cake pan with oil and flour it, then remove the excess, pour the mixture into the cake pan and level it. Preheat the static oven to 350°F and insert the cake when it’s hot, bake for 40 minutes.
Check the cooking with a toothpick and if it’s nice and dry, remove the cake from the oven and let it cool in the mold, otherwise continue cooking, the cooking time varies depending on the type of oven. Once the vegan carrot and almond cake has cooled, remove it from the mold and sprinkle it with some powdered sugar.
