Ingredients to prepare vegetable skewers
- 1 eggplant
- 1 yellow bell pepper
- 1 red bell pepper
- 1 zucchini
- 1 Tropea red onion
- q.b. extra virgin olive oil
- q.b. salt
- q.b. pepper
- q.b. parsley
- Half clove garlic

How to prepare vegetable skewers
Let’s start preparing the vegetable skewers, clean the vegetables and wash them, slice the eggplant into slices and then cut each slice into 4 parts; I put two pieces of eggplant on each skewer, but you can vary according to your taste.
Slice the zucchini into rounds
Clean the bell peppers, remove the filaments and seeds inside, and cut them into pieces.
Clean the Tropea onion and cut into pieces.
Now that all the vegetables are ready, you can start preparing the vegetable skewers, take the skewer stick and thread the vegetables; I threaded onion, yellow pepper, eggplant, zucchini, red pepper, onion, and then again yellow pepper, eggplant, zucchini, red pepper, ending with onion.
Obviously, you can vary the order of inserting the vegetables on the skewer stick, continue until all the skewers are completed.
Prepare the flavored oil so that while the skewers are cooking, they will absorb even more flavor; pour plenty of oil into a bowl,
add some salt,
some pepper,
chopped parsley
and crushed garlic
mix well and let it marinate.
Heat your grill pan or barbecue, when the grill pan is hot enough, place the skewers and cook them for 30 minutes, turning them frequently.
The vegetables should remain crunchy but be cooked
Once cooked, place the vegetable skewers on a serving plate and season them with the flavored oil prepared earlier.
Serve the vegetable skewers hot or at room temperature.

Store them in the fridge for 2/3 days
