Ingredients

  • 2 cups all-purpose flour
  • 5/8 cup granulated sugar
  • 1/2 cup + 2 tbsp butter (cold)
  • lemon zest
  • 1 egg (medium, at room temperature)
  • 1 egg yolk
  • medium Red Delicious apples (Stark) (about 14 oz / 400 g)
  • 3 tbsp brown sugar
  • Half lemon (juice)
  • 1 cup walnut kernels
  • 4 tbsp salted caramel (salted)

PREPARATION: APPLE AND WALNUT TART

The preparation of the APPLE AND WALNUT TART is very easy and quick.

  • In a bowl place the flour, sugar, cold butter cut into pieces, salt and the grated lemon zest.

    Work everything together until you obtain a sandy texture. Add the whole egg and the yolk and incorporate them quickly without overheating the butter.

    Form a disc, wrap it in plastic wrap and let it rest in the refrigerator for at least 30 minutes.

  • Peel the apples and remove the cores. Then cut them into cubes and place them in a frying pan. Add the brown sugar and the lemon juice.
    Put over heat and let cook for 15 minutes over low heat. When the liquid has reduced, turn off the heat and let cool.

    Add the chopped walnuts and fold them in.

  • Roll the pastry on a lightly floured surface to a thickness of about 5/32 in (4 mm). Butter an 8 in tart pan and line it with the pastry.

    Prick the base with a fork and spread the salted caramel over it, the recipe is HERE.

    As an alternative to the caramel, apple jam or apricot jam also works well.

  • Pour the apple mixture and level well with the back of a spoon.

    Cover with another round of pastry rolled a little thinner and seal the edges well. Then prick the surface.

    Bake the APPLE AND WALNUT TART in a preheated conventional oven at 356°F for 40-45 minutes.

  • Remove from the oven, let it cool completely, then unmold and serve dusted with powdered sugar.

STORAGE

Since the tart contains ingredients like apples and walnuts that can spoil more easily, it is advisable to store it in the refrigerator for 3-4 days. Place it in an airtight container or cover it with plastic wrap before refrigerating.
