The APPLE LOAF is an extremely simple and quick autumn dessert, prepared without using a whisk and with just one bowl, so you won’t have to spend time washing many dishes. With a crunchy top and a soft, moist heart, it’s the perfect cake to enjoy in the morning for breakfast or to accompany an afternoon tea on cold winter days.

Ingredients

  • 1 Golden apple
  • 1 1/2 cups 00 flour (all-purpose)
  • 6 tbsp + 1 tsp granulated sugar
  • 1/2 cup brown sugar
  • 1 tsp ground cinnamon
  • 1 tsp baking powder (for pastries)
  • 1/4 tsp baking soda
  • 1/4 tsp nutmeg
  • 1 pinch salt
  • 2 eggs (medium, at room temperature)
  • 7 tbsp sunflower oil
  • 1/2 tablespoon sugar (for the surface)

Steps

  • The preparation of the APPLE LOAF is very easy and quick.

    First, sift the flour, baking powder and baking soda into a bowl, then add the granulated sugar, brown sugar, a pinch of salt, the cinnamon and the nutmeg. Mix the dry ingredients with a whisk.

  • Add the room-temperature eggs and the sunflower oil and whisk until you obtain a smooth, homogeneous batter. At this point add the grated apple (cut into thin strips) and fold it in thoroughly. If you like, you can also add another half apple cut into small cubes.

  • Grease and flour or line with parchment paper a loaf pan (10 x 4.3 in), pour in the batter, level the surface and sprinkle it with half a tablespoon of sugar.

    Bake the APPLE LOAF in a preheated, conventional oven at 347°F for 50 minutes.

  • Because there are apples inside and the cake is therefore moist, check doneness with the classic toothpick test. If the toothpick comes out wet, continue baking for a few more minutes, protecting the surface with parchment paper so it doesn’t burn.

    Once the loaf is baked, remove it from the oven and let it cool slightly. Then very gently unmold it and let it cool completely on a wire rack.

VARIATION

To make the APPLE LOAF even more indulgent and give it a crunchy note, you can add coarsely chopped walnuts.

With the same batter you can also make muffins.
