Artichokes all’Ascolana

The ARTICHOKES ALL’ASCOLANA are an original and truly delicious main course. For those who love them, artichokes are good in every style, but stuffed, breaded and fried they have a flavor and crispiness that resisting is really impossible.
The preparation is really simple but requires three different types of cooking, so it takes a bit of time. But their goodness will reward you for the (minimal) effort and will delight the palates of all your guests.
Of course, what I propose here is a basic recipe, but you can vary the stuffing as you like, removing the meat entirely for a vegetarian version, or replacing the mortadella with ham or the ground beef with chicken. In short, feel free to experiment however you like — the result will always be AMAZING!!!

Ingredients

  • 4 Artichokes
  • 5.3 oz Beef (ground)
  • 1.1 oz Mortadella
  • 1 tbsp Parmigiano Reggiano
  • 1 sprig Parsley
  • to taste Salt
  • to taste Black pepper
  • to taste Flour
  • to taste Breadcrumbs
  • 2 Eggs
  • Peanut oil

For the artichokes all’Ascolana you will need

  • 1 Cutting board
  • 1 Bowl
  • 2 Pots
  • 3 Small bowls
  • Paper towels
  • 1 Slotted spoon
  • 1 Baking tray
  • Parchment paper

Preparation of artichokes all’Ascolana

Preparing these original yet tasty ARTICHOKES ALL’ASCOLANA is very simple.

  • Clean the artichokes by removing the tougher outer leaves, the inner choke and the tips. As you clean them, cut them in half and place them in a bowl with water and lemon juice so they don’t darken.
    Boil the artichokes in salted boiling water for about 10 minutes, drain them and let them cool.

  • Meanwhile, chop the mortadella and mix it with the ground beef. Add the Parmigiano, parsley and season with salt and pepper.
    Then stuff the artichokes and pair them two by two, pressing them lightly so they stick together.

  • Coat them in flour, then in beaten eggs seasoned with salt, and finally in breadcrumbs (repeat this process twice so the breading is even).

    Heat plenty of peanut oil and fry the artichokes.

  • When they are golden, drain them and transfer them to a baking tray lined with parchment paper. Bake in a preheated oven at 392°F and cook for about 15 minutes.
    Once cooked, remove them from the oven and arrange your ARTICHOKES ALL’ASCOLANA on serving plates. Cut them in half and serve.
