The preparation of the CHICKEN, EGGPLANT AND PANCETTA ROLLS is very easy and quick.
To begin, slice the eggplant into slices about 0.2 in thick (about 1/4 in) and grill them. Lightly pound the chicken breast slices between two sheets of parchment paper to make them thinner and easier to roll. Then, lightly salt the inside.
On the chicken slices place the salted eggplant slice, the smoked scamorza or any melting cheese you prefer, a slice of pancetta and a sage leaf. The cheese should be cut into slices thick enough so that during cooking it does not escape excessively from the roll..
