Ingredients
- 1 pineapple
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 5 tbsp water
- 1 lemon (juice)
- 1/2 glass rum
- 1 packet vanillin
- cream ice cream (or vanilla)

For the caramelized pineapple you will need

Preparation – Caramelized Pineapple
To prepare the caramelized pineapple, start by cutting off the base and the crown of the pineapple and removing the rind, taking care to remove any dark spots. Cut the pineapple into slices about 3/8 inch (1 cm) thick and place them in a bowl that can easily hold them.
Moisten with the rum and let rest for at least 1 hour, turning the slices occasionally.Squeeze the lemon and set the juice aside.
In a heavy-bottomed saucepan, put the granulated sugar and brown sugar, add five tablespoons of water and stir over medium heat until the sugar has completely dissolved.
Without stirring any further, gently simmer the caramel, shaking the pan occasionally, until it reaches a nice golden color.
Add the lemon juice, the liquid from macerating the fruit, the vanillin and stir over low heat until everything is well combined, about 5 minutes.Place the pineapple slices in the saucepan and turn them a couple of times so the caramel coats them evenly. Cook for 10 minutes.
Let cool in the pan.Serve the caramelized pineapple accompanied by cream or vanilla ice cream and a few mint leaves.
