Ingredients
- 2 1/2 cups 00 flour (all-purpose flour)
- 1/2 cup butter (cold (about 4.4 oz))
- 1/2 cup granulated sugar ((about 3.5 oz))
- 1 egg (medium, at room temperature)
- 1 egg yolk
- lemon zest

PREPARATION CHERRY JAM TART
Making the CHERRY JAM TART is really simple and quick.
First, prepare the shortcrust pastry. Pour the flour into a bowl or into the bowl of a stand mixer fitted with the paddle. Create a well in the center and add the cold butter in pieces, the sugar, a pinch of salt and the lemon zest.
Work quickly until you obtain a sandy mixture.
At this point add the eggs at room temperature and incorporate them into the mixture until you obtain a smooth, homogeneous dough.
Wrap the dough in plastic wrap and chill in the refrigerator for at least 30 minutes.
After chilling, take part of the dough and roll it out with a rolling pin to a thickness of about 1/8 in (4 mm), using a little flour as needed to prevent sticking.
Line an 8–8 3/4-inch pan with the pastry sheet, prick the base with the tines of a fork, and fill it with jam.
Roll out the remaining pastry and use cookie cutters to cut the shapes you want, then carefully place the pastry pieces on the surface of the tart and seal the edges well.
Bake in a preheated conventional (static) oven at 356°F and bake for 30-35 minutes.
Once baked, remove from the oven and let cool completely before removing from the pan.
