The CHICKPEA FLOUR CREPES gluten-free, egg-free and lactose-free versions are a twist on the classic crepe recipe typical of French cuisine. Ingredients

  • 1 cup chickpea flour
  • 1 1/8 cups water
  • 2 1/2 tbsp extra virgin olive oil
  • 1/6 tsp salt

  • 1 Crepe pan
  • 1 Bowl
  • 1 Sieve
  • 1 Whisk

Steps

  • The preparation of CHICKPEA FLOUR CREPES is really very simple and quick.

    In a bowl place the sifted chickpea flour, the salt, the extra virgin olive oil and the water. Mix everything with a whisk until you obtain a smooth batter without lumps.

  • Brush a nonstick pan about 7 in in diameter with oil, heat it and pour in half a ladle of batter. Spread it evenly over the whole surface and let it cook for 30 seconds over low heat. When bubbles form, gently turn the crepe and cook the other side as well.

  • As your chickpea crepes are ready, place them on a plate and fill them as you like.

STORAGE

If you make the chickpea flour crepes and don’t eat them immediately, you can cover them with plastic wrap and store them in the fridge for 1 day. Alternatively, you can freeze them.

VARIATION

To give the chickpea flour crepes an extra touch of flavor, you can season the batter with finely chopped parsley and black pepper. The taste will remind you a lot of Sicilian panelle.
