Ingredients
- 7 oz dry cookies (crushed)
- 8.5 tbsp butter (soft)
- 2/3 cup powdered sugar
- 3.5 oz dark chocolate
- 7 tbsp unsweetened cocoa powder
- 1 oz almonds (peeled and toasted)
- 1 tbsp coffee (espresso, milk or liqueur)
- 2 2/3 tbsp powdered sugar
For the egg-free chocolate salami you will need
- 2 Bowls
- 1 Small bowl
- Parchment paper
- 1 Electric whisk
- 1 Spatula
Preparation of the egg-free chocolate salami
Preparing the EGG-FREE CHOCOLATE SALAMI is really simple and quick to make.
Coarsely crumble the cookies by hand into a large bowl.
Work the soft butter with the powdered sugar. Add the chocolate melted in a bain-marie or in the microwave and mix it well.In the bowl with the chocolate, add the crumbled cookies, the cocoa, the chopped almonds and the cold unsweetened coffee.
Mix everything with your hands until you have a homogeneous mixture.
Place the mixture on a sheet of parchment paper, compact it well and shape it into the classic salami shape.Wrap the salami well in the paper, tightening the ends so it keeps its shape, and put it in the fridge to firm up for at least 2 hours.
After the resting time, take it out of the fridge and let it sit at room temperature for 20 minutes. Then unwrap it, roll it in powdered sugar and serve it sliced into pieces about 3/8 inch thick.

The chocolate salami keeps very well thanks to the dry and fatty ingredients that compose it. Here are some tips to preserve it at its best:
Refrigerator storage (Recommended method)
Duration: up to 7-10 days.
How to store: wrap it in plastic wrap or put it in an airtight container to prevent it from absorbing odors from the fridge.
Freezer storage (For longer periods)
Duration: up to 2-3 months.
How to store: wrap it first in plastic wrap and then in a sheet of aluminum foil or place it in a freezer bag.
How to serve: thaw it in the fridge for a few hours before serving.
