To prepare the ROASTED POTATOES first preheat the oven to 392°F. It is essential that it has reached temperature when you put the potatoes in. Next, peel the potatoes using a vegetable peeler. Then wash them and cut them into wedges or cubes (whichever you prefer) of medium size.
Try to cut them roughly the same thickness so they all have the same cooking time in the oven.
Soak them for five minutes in plenty of water to remove some of the starch. Put the potatoes in a pot with water and parboil them for about 5 minutes. This step is the secret to achieving crispy, well-browned potatoes.
Grease a nonstick baking pan with extra virgin olive oil; if you don’t have one, I recommend using a regular baking tray lined with parchment paper. Drain the potatoes well and spread them evenly on the tray to ensure uniform cooking.
Add the rosemary sprigs, the fresh thyme leaves and the two garlic cloves peeled and sliced. Drizzle another little olive oil over the potatoes, season with salt and bake.
Bake for about 1 hour, turning them from time to time. Shortly before turning off the oven—about 4–5 minutes—sprinkle the potatoes with the Parmesan and put them under the broiler to brown them and make them crispy.
