Ingredients
- 4 eggs
- 1 tablespoon mayonnaise
- 1 pickled gherkin (chopped)

PREPARATION OF DEVILED EGGS
The preparation of deviled eggs with pancetta is very easy and quick.
Place the eggs in a small pot with a pinch of salt and cover them completely with cold water. Then put over the heat and from the moment it reaches a boil, cook them for 10 minutes.
Drain them and cool them in ice water.
Once cold, peel them and cut them in half lengthwise.
Place the yolks in a bowl, add the mayonnaise, the pickled gherkin chopped into small pieces and season with salt and pepper. Mix everything until creamy.
Arrange the egg halves on a plate and fill them with the filling using a teaspoon.
Meanwhile heat a skillet and brown the pancetta slices until they are crisp. Drain them on a sheet of parchment paper and allow them to dry and cool.
Decorate the eggs with chopped pancetta and sliced chives.
If you want to add extra flavor to your eggs you can also crumble some pancetta into the filling mixture.
