The FOCACCIA WITH STRACCHINO is a type of stuffed focaccia typical of Liguria. Cheese focaccia exists in many versions, with toppings that include only cheese (of various types, sometimes mixed), or cheese combined with other ingredients (cheese and cooked ham, cheese and frankfurter, speck and fontina, etc.). It’s great served as an appetizer at aperitivo time, and if you use ready-made focaccia dough it’s ready in minutes, making it a perfect last-minute dinner saver or a resource when guests arrive unexpectedly and you have little time to cook.

Ingredients
- 2 cups all-purpose flour
- to taste water
- to taste extra virgin olive oil
- 9 oz (approx. 1 cup) stracchino cheese
- to taste coarse salt

Steps
Preparing the FOCACCIA WITH STRACCHINO is really very simple, and if you use a ready-made focaccia base it’s also very quick.
On your work surface make a well with the flour; in the center pour one tablespoon of oil, add a pinch of salt and pour in enough water to obtain a soft dough.
Knead the dough for a long time, form it into a ball, cover it with an inverted bowl and let it rest for 30 minutes.
Divide the dough into two pieces and, using a rolling pin, roll them into very thin disks.
Use one disk to line a round pan (9.5 in diameter) lined with parchment paper, spread the stracchino in small dollops over the surface and, if desired, sprinkle with freshly ground pepper.
Cover with the remaining disk, seal the edges well, dimple the surface of the focaccia by pressing with your fingertips, brush it with a mixture of water and extra virgin olive oil and sprinkle it with a little coarse salt.
Place your focaccia with stracchino in a preheated conventional oven at 374°F and bake for about 15–20 minutes.
Remove from the oven and eat the focaccia with stracchino while it’s hot.
