The preparation of the GRILLED APRICOTS WITH STRACCHINO, PROSCIUTTO AND HONEY is very simple and quick.
Preheat the grill to medium-high heat. Halve the apricots, remove the pit and brush the inside of the apricots with oil.
Place the apricots on the grill, with the oiled side down, and grill them for a few minutes or until slightly softened and showing the classic grill marks.
Arrange the apricots on a serving plate and garnish each with a teaspoon of stracchino (you can also use buffalo ricotta, brie, a soft blue cheese or gorgonzola), half a slice of prosciutto rolled up, then finish with a drizzle of wildflower honey and a grind of black pepper.
