Ingredients
- 4 cups type 0 flour (with 14–15 g of protein per 100 g of flour)
- 2 1/4 tsp active dry yeast
- 1 1/4 cups milk (at room temperature)
- 1/3 cup granulated sugar
- 1 1/3 tsp salt
- 3 1/3 tbsp sunflower oil
- 1 1/2 cups peanut oil (for frying)
- 1 cup granulated sugar (for coating)

- 1 Pot
- 1 Work surface
- 1 Rolling pin
- Plastic wrap
- 1 Skimmer
- 1 Baking dish
PREPARATION – LUNA PARK FRITTERS
Place the flour and the active dry yeast in a bowl. Mix, then add the milk. Combine the mixture with a fork and work it by hand for 5 minutes. Add the sugar and incorporate it.
Add the salt and mix it in thoroughly. Finally, add the sunflower oil and allow it to be absorbed by the dough. Transfer it to the work surface and knead until you obtain a smooth ball.
Place it in a clean bowl, cover with plastic wrap and let it rise for 1 hour, or until doubled, in a switched-off oven with the light on.
When the first rise is complete, turn the dough out onto the work surface, divide it into 8 pieces and shape them into balls. Place them spaced apart on a high-edged baking tray lined with parchment paper, and cover the balls with plastic wrap. Let them rise for another 40 minutes.
After the second rise, lightly flour the work surface and press the balls with your hands and then with a rolling pin until you form discs about 1/8 inch thick. In the meantime, heat the oil for frying.
Carefully drop the fritters into the hot oil and fry them one at a time, holding them down with a skimmer so they don’t puff up too much.
Turn them occasionally, and once golden, drain them on paper towels. While still hot, roll the luna park fritters in granulated sugar. For extra flavor, you can aroma the sugar with lemon or orange zest.
As with all fried foods, they should be eaten just made and still hot to best appreciate their softness and indulgence.
STORAGE
At room temperature
Duration: 1 day.
How: Put the fritters in an airtight container or wrap them in plastic wrap to prevent them from drying out. Store in a cool, dry place.
Tip: Before eating, you can warm them slightly in the oven or microwave to restore softness.
In the refrigerator
Duration: 2–3 days.
How: Place the fritters in an airtight container or a food bag. In the fridge they will lose some softness.
Tip: Reheat them in a low oven or in the microwave with a damp paper towel to regain softness.
Freezing
Duration: Up to 1 month.
How: Wrap individually in plastic wrap, then put them in a freezer bag. This prevents them from sticking together.
Tip: Thaw at room temperature and reheat in the oven or microwave before serving.
