Ingredients

  • 2 eggs (medium, at room temperature)
  • 1/2 cup granulated sugar (about 120 g)
  • 2 cups all-purpose flour (type 00)
  • 2 1/2 tsp baking powder
  • 1 tbsp matcha green tea powder (about 6 g)
  • 1/2 cup milk (at room temperature (about 120 g / 120 ml))
  • 6 tbsp (3/8 cup) sunflower seed oil (about 80 g)
  • 1 tsp vanilla extract
  • salt
  • 3.5 oz dark chocolate chips (about 100 g (approximately 1/2 cup))

What you’ll need for matcha tea and chocolate muffins

  • 2 Bowls
  • 1 Sieve
  • 1 Whisk
  • 12 Paper liners

Preparation: matcha tea and chocolate muffins

  • In a bowl, lightly beat the eggs with the sugar.
    Add the oil, milk, and vanilla extract and mix thoroughly.
    In another bowl, sift together the flour, matcha tea powder, baking powder, and salt.

  • Pour the dry ingredients into the wet ingredients and stir until you have a smooth batter.
    Fold in the chocolate chips (reserve a few to sprinkle on top).
    Fill the liners about 3/4 full.
    Sprinkle the tops with the reserved chocolate chips.
    Bake in a preheated conventional oven at 356°F for 18 minutes. Check doneness with the classic toothpick test.

  • Remove from the oven and let cool on a wire rack.

Variation

Also great with white chocolate for a sweeter contrast.

Storage

At room temperature
2–3 days
Store the muffins under a glass dome or in an airtight container.
Keep them away from heat sources and direct light to preserve the matcha’s aroma and color.

Up to 2 months
Place in a container or freezer bag.
Thaw at room temperature or warm slightly in the oven or for a few seconds in the microwave.
