You can also prepare them well ahead: place them on a tray, freeze them, and then transfer them to a freezer bag. When needed you can fry them from frozen or bake them in the oven.

Ingredients
- 11 oz mozzarella (I recommend using the pizza-style mozzarella block)
- 2 eggs
- as needed all-purpose flour

- 1 cup vegetable oil
For the melty mozzarella sticks you will need

Preparation of melty mozzarella sticks
Making the MELTY MOZZARELLA STICKS is really quick and easy.
Beat the eggs and season them lightly with salt. Cut the mozzarella into sticks and lightly flour them. Dip them into the egg and then into the breadcrumbs. If you are using fresh fior di latte mozzarella, once cut pat it very dry to remove as much liquid as possible.
Pour plenty of vegetable oil into a deep, high-sided pan and heat it.
Before immersing your mozzarella sticks, test the oil temperature by dropping a pinch of breadcrumbs into the pan: if it sizzles, you can fry 4 or 5 mozzarella sticks at a time.
Let them fry over medium heat until they turn golden.
Drain them carefully without piercing them, using a slotted spoon, and as you fry place the mozzarella sticks on paper towels.
Season lightly with salt and enjoy the melty mozzarella sticks hot, served with a fresh salad or grilled vegetables.
Storage
In the refrigerator (after frying):
Allow them to cool completely on paper towels.
Store the sticks in an airtight container, placing a sheet of paper towel at the bottom to absorb moisture.
They keep for up to 2 days.
To enjoy them again, it is recommended to reheat them in a hot oven (392°F for 8-10 minutes) or in an air fryer to make them crispy outside and melty inside again. Avoid the microwave, which makes them soggy.
In the freezer (raw, breaded):
You can prepare the sticks, bread them and freeze them raw, placing them first on a tray spaced apart.
Once frozen, transfer them to a freezer bag: they keep for up to 1 month.
Fry them directly from frozen, slightly lowering the oil temperature (about 320-338°F) so they cook through evenly without burning the outside.
