The dish comes from the pairing of two very different flavours that integrate perfectly: the saltiness and slightly bitter taste of the olive pâté combines very well with the delicate sweetness of the stewed onions, made soft yet still a little crunchy by the slow cooking in the pan. The result is a perfect sauce for pasta (preferably short pasta that holds the sauce well), fragrant, tasty and very moreish.

- 2 yellow onions (large)
- 3 tablespoons black olive pâté
- to taste extra virgin olive oil
- to taste salt

- Half glass white wine

Steps
The preparation of PASTA WITH ONIONS AND OLIVE PÂTÉ is very simple and quick.
Take two large onions and slice them thinly. Place them in a large pan with a generous drizzle of oil. Season with salt and pepper and cook over low heat for 15 minutes. They should wilt but remain slightly crisp.
Add the sugar and let them caramelize slightly. Add a little water if they become too dry or start to burn.
Turn off the heat, add the olive pâté and mix it with the onions.
Meanwhile, cook the pasta in plenty of salted boiling water. Drain it al dente into the pan with the sauce, add two or three ladles of the cooking water, add the chopped parsley and toss to combine.
Plate and enjoy the pasta with onions and olive pâté hot and creamy.
